Directions
- Peel and thinly slice the potatoes and carrots. Divide them evenly among 4 heavy-duty foil trays or large foil sheets shaped into packets.
- In a bowl, gently combine the ground beef with the onion soup mix. Form into 4 equal patties.
- Place one beef patty on top of each portion of potatoes and carrots.
- Fold or crimp the foil edges upward to help keep the juices contained while cooking.
- Arrange the foil trays or packets inside the slow cooker.
- Cover and cook on LOW for 6–7 hours or HIGH for 3½–4 hours, until the vegetables are tender and the beef is fully cooked.
- Let rest for a few minutes before serving hot with the flavorful juices spooned over the top.
