Prep the potatoes
Scrub well, dry, and cut each potato in half lengthwise.
Layer in slow cooker
Lightly grease the slow cooker. Place potatoes cut-side up in a single layer.
Add the cream mixture
Mix cream, melted butter, garlic powder, herbs, salt, and pepper. Pour evenly over the potatoes.
Cook
Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until fork-tender.
Finish & serve
Spoon the sauce over the potatoes before serving and let them sit for a few minutes to absorb the flavors.
