Crumble ground beef over raw chopped potatoes, combined with 3 ingredients, into slow cooker for a simple supper I make without even thinking

This Slow Cooker Amish Poor Man’s Stew is a simple, budget-friendly comfort dish that turns everyday ingredients into a rich, hearty meal. As it cooks low and slow, the ground beef releases flavorful juices that seep into the potatoes and onions, while the tomato soup creates a smooth, slightly tangy sauce that thickens into a satisfying gravy. With minimal prep and a long simmer, it delivers a classic, filling “meat-and-potatoes” dinner.

Slow Cooker Amish Poor Man’s Stew

Ingredients:

  • 2 lbs russet potatoes, peeled and cut into 1-inch cubes
  • 1 lb ground beef (80–85% lean)
  • 1 medium yellow onion, chopped
  • 1 can (10.5 oz) condensed tomato soup
  • 1 cup beef broth (or water with bouillon)
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions:

Step 1: Build the Base
Place the cubed potatoes in the bottom of a 4–6 quart slow cooker. Add the chopped onion, salt, and pepper evenly over the top.

Tip: Russet potatoes work best because their starch helps naturally thicken the stew as it cooks.

Step 2: Add the Beef
Crumble the raw ground beef over the potatoes in an even layer. Break it into small pieces so it cooks evenly and distributes flavor throughout.

Step 3: Prepare the Sauce
In a bowl, mix the condensed tomato soup with the beef broth until smooth. Pour it evenly over the beef layer.

Tip: Don’t stir at this stage—keeping the layers intact helps everything cook properly and prevents the potatoes from over-softening too early.
