Fold in the raisins and chopped almonds using a spatula or spoon. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle a few extra almonds over the surface for a beautiful golden finish after baking.
Bake for around 40 to 50 minutes, or until a toothpick inserted in the center comes out clean. Once baked, let the cake cool in the pan for a few minutes before transferring it to a wire rack.
Slice and serve warm or at room temperature. It pairs perfectly with tea, coffee, or even a glass of milk.
Extra Tips
For softer and juicier raisins, soak them in warm water or fruit juice for about 10 minutes before adding them to the batter. If you want the cake to have a shiny bakery-style finish, brush the top lightly with honey or syrup once it comes out of the oven.
This cake actually tastes even better the next day because the flavors become richer and more balanced overnight.
