Homemade Strawberry Juice

Prep Time: 10 mins | Total Time: 10 mins | Servings: 2-3 glasses

Ingredients

1 lb fresh strawberries (about 4 cups), rinsed and hulled
1½ cups cold water
2-4 tablespoons sugar or honey (to taste)
1 tablespoon fresh lemon juice (optional)
Ice cubes for serving
Optional add-ins:

Fresh mint leaves
½ cup other berries (raspberries or blueberries)
1-inch knob of fresh ginger
Instructions

Step 1: Prepare the strawberries
Rinse the strawberries thoroughly under cold water. Remove the green tops (hull them) using a small knife. If strawberries are large, chop them in half.

Step 2: Blend
Add the prepared strawberries, cold water, sugar or honey, and lemon juice (if using) to a blender. Blend on high for 30-60 seconds until completely smooth.

Step 3: Strain
Place a fine-mesh strainer over a large bowl or pitcher. Pour the blended mixture through the strainer. Use a spatula or spoon to press down on the pulp, extracting as much liquid as possible. Discard the seeds and pulp.

Step 4: Taste and adjust
Taste the juice. Add more sweetener if too tart, or more lemon juice if too sweet.

Step 5: Serve
Fill glasses with ice cubes and pour the strawberry juice over the top. Garnish with fresh mint or a strawberry slice if desired. Serve immediately.
