  • 40 g (1.4 oz) sunflower seeds

  • 20 g (0.7 oz) sesame seeds

  • 20 g (0.7 oz) flaxseeds


Instructions

  1. Soften the apricots

    • Soak the dried apricots in warm water for 10–15 minutes.

    • Drain well.

  2. Process the nuts and seeds

    • In a food processor, add walnuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, and flaxseeds.

    • Pulse until you get a coarse, crumbly mixture (don’t turn it into paste).

  3. Add apricots

    • Add the softened apricots to the processor.

    • Blend until the mixture starts to come together and becomes slightly sticky.

  4. Form the cookies

    • Scoop about 1 tablespoon of mixture.

    • Roll into balls, then gently flatten into cookie shapes.

  5. Choose your method

    No-bake option:

    • Place cookies on a tray.

    • Refrigerate for 1–2 hours until firm.

    • Preheat oven to 170°C / 340°F.
